It All Starts with a Written Traceability Plan

With the release of the Food Safety Modernization Act (FSMA), the FDA shifted its focus from being responsive to foodborne illness events to putting measures in place to proactively prevent them. The foundation of this preventive approach is requiring produce companies to create written food safety plans.  These plans require companies that manufacture, process, pack, or hold foods on the Food Traceability List to:

Complete a Hazard Analysis:  To identify known or reasonably foreseeable hazards

Determine if the hazard requires preventative controls

Identify the Process Steps of those preventive controls
Your Food Safety Director may have already developed a Food Safety Plan for your organization. If not, the FDA has created a Food Safety Plan Builder to help food production facilities develop food safety plans specific to their products and facilities and meet the Current Good Manufacturing Practice, Hazard Analysis, and Risk-Based Preventive Controls for Human Food regulation (21 CFR Part 117).
